Healthy Lemon and Coconut Bliss Balls

These Healthy Lemon and Coconut Bliss Balls are a refreshing no-bake snack made with wholesome ingredients like oats, coconut, lemon, and flaxseed. Naturally sweetened and nut-free, they are perfect for healthy snacking, meal prep, and lunchboxes.

Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1 tbsp ground flaxseeds flaxseed meal
Wet Ingredients
  • 3 tbsp pure maple syrup or pure honey
  • ½ lemon juiced
  • 1 tbsp lemon zest
  • 1 tbsp unrefined coconut oil melted
  • ½ tsp vanilla extract
For Coating
  • Extra desiccated coconut
  • Extra lemon zest

Equipment

  • food processor or blender

Method
 

  1. Add the rolled oats, coconut flakes, and ground flaxseeds to a food processor and blend until well combined.
  2. Add the maple syrup, lemon juice, lemon zest, melted coconut oil, and vanilla extract. Blend until a sticky dough forms.
  3. Scoop out small portions of the mixture and roll into bite-sized balls using your hands.
  4. Roll each bliss ball in extra desiccated coconut and lemon zest until evenly coated.
  5. Place the bliss balls in the refrigerator for at least 1 hour to firm up before serving.

Notes

  • Use whole rolled oats rather than quick oats for the best texture.
  • A food processor works best for blending the mixture smoothly and evenly.
  • A blender can also be used, although the mixture may be a little harder to scrape out from under the blades.
  • Fresh lemon juice and zest provide the best flavour.
  • Store in an airtight container in the fridge for up to 1 week.
