- Add the rolled oats, coconut flakes, and ground flaxseeds to a food processor and blend until well combined.
- Add the maple syrup, lemon juice, lemon zest, melted coconut oil, and vanilla extract. Blend until a sticky dough forms.
- Scoop out small portions of the mixture and roll into bite-sized balls using your hands.
- Roll each bliss ball in extra desiccated coconut and lemon zest until evenly coated.
- Place the bliss balls in the refrigerator for at least 1 hour to firm up before serving.
Notes
- Use whole rolled oats rather than quick oats for the best texture.
- A food processor works best for blending the mixture smoothly and evenly.
- A blender can also be used, although the mixture may be a little harder to scrape out from under the blades.
- Fresh lemon juice and zest provide the best flavour.
- Store in an airtight container in the fridge for up to 1 week.
