Two-Ingredient Dough for Pizza Scrolls

An easy no-yeast dough made with just Greek yoghurt and self-raising flour. Ready in 10 minutes and perfect for pizza scrolls, cinnamon scrolls or a pizza base.

Ingredients
  

  • cups self-raising wholemeal flour (or 2 cups self-raising plain flour)
  • 1 cup Greek yoghurt
  • Filling of choice (see notes below)

Equipment

  • Large mixing bowl
  • Baking tray
  • Baking paper
  • Rolling Pin

Method
 

  1. Preheat oven to 180°C / 350°F.
  2. Line a baking tray with baking paper.
  3. In a large mixing bowl, add the yoghurt and flour.
  4. Gently combine the two ingredients until a ball starts to form.
  5. Turn the dough onto a floured surface and knead for 2–3 minutes until smooth.
  6. Add extra flour to the surface and rolling pin, then roll the dough out into a rectangle just under 1cm thick.
  7. Add spreads and/or toppings to the base, leaving a 2cm gap at the top edge.
  8. Roll the dough up lengthways into a log.
  9. Cut into 2cm pieces and lay flat on the lined baking tray.
  10. Bake for 20 minutes, or until golden.
  11. Rest on a wire rack for a few minutes, then serve warm.

Notes

  • If the dough is too sticky, add a tablespoon of flour at a time until it no longer sticks to the hands. If it's too dry, add a tablespoon of yoghurt at a time until the right consistency is reached.
  • Makes approximately 12 scrolls, or 1 large pizza base.
  • Freezes well for up to 3 months — useful for meal-prepping lunchboxes.
  • Ideal for school and work lunchboxes.
  • If using self-raising plain flour instead of wholemeal, use 2 cups flour to 1 cup yoghurt.
