Ingredients
  

Base
  • 1 cup oat flour
  • 1 cup spelt flour
  • 1 cup desiccated coconut
  • ½ cup coconut sugar
  • cup cacao powder
  • cup melted coconut oil
  • ¼ cup hot water
Chocolate Icing
  • 3 tbsp cacao powder
  • 3 tbsp pure maple syrup
  • 2 tbsp melted coconut oil
  • 1 tbsp hot water
  • Extra desiccated coconut to sprinkle on top

Equipment

  • Baking dish 28 x 18 cm (11 x 7 in)

Method
 

  1. Preheat oven to 180°C / 350°F and line a 28 x 18 cm baking dish.
  2. Mix oat flour, spelt flour, coconut, coconut sugar, and cacao in a bowl.
  3. Add melted coconut oil and hot water. Mix until slightly sticky.
  4. Press firmly into the baking dish.
  5. Bake for 10–12 minutes (do not overbake).
  6. Mix icing ingredients until smooth and glossy.
  7. Pour icing over warm base and spread evenly.
  8. Sprinkle with coconut (optional)
  9. Cool completely, then refrigerate for at least 2 hours.
  10. Slice once set.

Notes

  • If mixture is too dry, add a little extra hot water.
  • Do not overbake or slice may become crumbly.
  • For best results: refrigerate before slicing.
  • Store in fridge up to 7 days in airtight container
