Method
- Preheat oven to 180°C / 350°F and line a 28 x 18 cm baking dish.
- Mix oat flour, spelt flour, coconut, coconut sugar, and cacao in a bowl.
- Add melted coconut oil and hot water. Mix until slightly sticky.
- Press firmly into the baking dish.
- Bake for 10–12 minutes (do not overbake).
- Mix icing ingredients until smooth and glossy.
- Pour icing over warm base and spread evenly.
- Sprinkle with coconut (optional)
- Cool completely, then refrigerate for at least 2 hours.
- Slice once set.
Notes
- If mixture is too dry, add a little extra hot water.
- Do not overbake or slice may become crumbly.
- For best results: refrigerate before slicing.
- Store in fridge up to 7 days in airtight container
